Watermelon Agua Fresca
We had a barbecue for some good friends this memorial day week-end and I made big plans for the meal. I took out all my cookbooks and searched for summer-y recipes. I immediately felt attracted to this mexican drink which I found in my favorite cookbook(the pictures are AWESOME!)...the drink not only looked inviting with it's bright color but sounded refreshing too. Unfortunately my fridge was full, so I couldn't make it for the party. But as soon as the party leftovers got done and my fridge started looking slightly empty once again, I pulled out this recipe and made it pronto. And you should be doing the same!
This has become my new favorite drink after just a couple of sips and I can already see myself drinking this while reading a nice book sitting on the patio...like the image? Then go make the drink and give yourself a treat! The recipe is on me, I assure you :P

Ingredients:
1 ripe seedless watermelon, about 6 lbs
Juice from 2 limes
6 tbsp sugar
1/2 cup crushed fresh mint leaves
2 cups cold water
1 lime, sliced
ice cubes to serve
Slice the watermelon and remove the thick peel/rind. Chop the sliced melon into big pieces. Working in batches, puree the melon in a food processor or blender till smooth. Transfer each batch to a big bowl. After all the melon is pureed, add fresh lime juice, crushed and torn mint leaves and sugar to the pureed mixture. Stir to dissolve completely. Let it sit at room temeperature for 1-3 hours. I let mine sit for 2 hours and the flavors developed nicely. Pour the melon mixture through a medium sieve into another bowl/jar and add water, lime slices and ice cubes. Serve and enjoy!

My brother and I used to be such lazy bums when at home that we could not get ourselves to eat watermelons as is cos of the seeds. So my poor Dad would either de-seed and cube them for us or just make a juice out of it. I have found room mates just like me and now I make the juice !! :)) Never added mint, will try that this time :)
what a color! u really are into colors nowadays! i do like th ecombination of watermelon and mint but never served it for friends.. i just chop it up and add sugar and mint.
Priya: I used to be like that too...my mom had to wash grapes, de-stem and then present them in a pretty bowl...only then would I eat it......a big brat wasn't I? :P

Speechless...The color is just amazing wowwww and i am sure it would taste even better. Will definitely try this out. I love watermelons. Is that one of those Ikea Jars? nice ones.

I am not into making juices but this one looks great. But..ahem...when do we add the mint leaves? Sorry for the dumb question! Is it blended or just added on top?

Thanks for the correction. I have made it already though. Crushed the leaves and added it at the end and since I had prepared the juice at night ( having some free time on hand only then) I kept it overnight in the fridge and sieved it the next morn. And I must tell you that I am really not that fond of watermelon juice. But this! I loved it and so did my hub. I am now told to prepare more and more of this...!

I love this drink! My mother-in-law is from El Salvador and makes it all summer. She never added mint though. I love julips and mojitos so I'll try your version. This is MY first time making the drink and I'm not sure of quantity. Does this make a gallon pitcher? I'm trying to anticipate how many watermelons for 20 people...then knowing how delicious this is... there will never be enough!
Anonymous: Yeah, I think it does make a gallon....I haven't made it in months, so can't remember the exact quantity but a gallon sounds about right though. Hope you like it!
P.S: Each gallon easily feeds about 10 people. Hope you find the info useful!
